This is one of my all-time favourite dishes since going vegan, it is so darn delicious!
To make this fried rice I crumbled some tofu and fried it up with onion, spices and flavourings. Next, add carrots, peas and rice along with the salty, spicy, peppery sauce and you’re good to go! I always garnish this dish with fresh spring onion, fresh chilli and fresh lemon — the lemon really elevates the dish, in my opinion.
Just a little note: it was unbelievable noisy when I filmed this and I had to pause so many times! I apologise for all the editing cuts.
